Every weekend I always make something nice for breakfast, or brunch if I sleep in. This weekend I did something completely different and did egg bakes inside of portabello mushrooms, and I really liked it.

Not really a fan of the lighting in the pic, it was cloudy when I took the photo… but the taste was great! I took this recipe and made a couple of my own changes for my own liking, like wilting and seasoning my own spinach and using a different cheese. It was the most vegetarian eggs and steak dish I ever made. One was enough to tie me over until dinner, which means breakfast is going to be real easy for the next couple of days.
