I treated myself to a beef and lettuce sandwich wrap today instead of the usual diet shake. I made a Korean inspired sauce and poured it over some cooked ground beef, a little jasmine rice and green onion, wrapped with some bibb lettuce and spinach wraps. I wanted to do something different, and not only did I achieve that, it tastes really good! I think next time I’ll chop up some tomato and cook some bell pepper or carrot along with it.

Your Food Porn For The Evening
I pitched in for dinner this evening. Took a couple chicken breasts, sliced them thin, and combined them with some prosciutto and gouda. Then I ran out of gouda and prosciutto and substituted swiss and regular ham as an alternative. It kind of reminds me of Chicken Cordon Bleu. I might have to make a sauce to accompany it next time, but the addition of the ham and prosciutto and cheeses gave the chicken a nice flavor palate. I also cooked up some fresh green beans and made some buttery mashed garlic potatoes. I think we finally have enough leftovers that I won’t have to worry about food for the next few days.
Think I’m feeling the itis now, time to coma.

I had a bunch of extra vegetables around, and was still in a curry kind of mood today. When lunch came around I sacrificed one of my chicken breasts for a green chicken curry with rice noodles. I made it mild, stomach hasn’t been nice to me today. Fortunately I also made the breakfast curry mild too. 😛 I’ve also been living on chai today. Started the morning off with a Canadian Maple Chai, and ended the day with some Rooibos Chai. I already have breakfast curry packed up for tomorrow morning along with some grapes, crackers and peanut butter dip. That should keep me plenty fueled tomorrow morning, even the tea has caffeine. I’m Ret 2 Go.
I’m thinking of taking the other chicken breasts and using them in a baked chicken recipe, involving some gouda cheese and prosciutto.
From Spicy To Sweet
Been awhile since I’ve made a breakfast curry, and we were low on vegetables, so it gave me a good excuse to buy some and make a nice breakfast curry. It has bell pepper, potato, carrot, fresh green beans, onion and grated ginger. All cooked in a homemade red curry sauce poured over Jasmine Rice. I have enough to last me for the week methinks, and tomorrow if I’m up for it I want to try and make a Chinese breakfast pancake. I found a recipe recently and I want to try and make my own.
I also felt the need for a sweet snack of apples and peanut butter dip. I made it with some peanut butter, greek yogurt, vanilla, honey, cinnamon, nutmeg, fresh ginger, cayenne pepper and some coconut milk to make it a little easier to stir. Tastes nice on apples and even vegetables, like carrots or green beans for example. I made a big bowl, should also last me awhile, a good protein packed dip to accompany some chopped fruits and veggies that tastes like a dessert. I can’t argue with that.
Random Yogurt Parfait Appears
Today was a busy one, both at work and at home. Finally mailed off a couple packages and managed to even make myself a special work breakfast for tomorrow. Vanilla Greek yogurt mixed with matcha and honey, frozen blueberries and a crunchy topping made of organic cinnamon toast square cereal and walnuts that I crushed in a mortal and pestle. I wanted to do something different from the usual meal bars I’ve been eating during the week. I’ve also somehow managed to lose more weight despite my lack of trying. I figured with vacation and me being a human vacuum of food I would have put something on, but I’m continuing downwards. I haven’t lost a whole bunch (155 to 152), but I’m definitely at a spot I haven’t been in years, I’m at a point now where I might have to go through my wardrobe and discard some trousers, as well as buy some new ones.

Curry! It’s for breakfast!
Sorry for not writing, been stuck between busy and shiny objects. I brought home four computers the other day to be worked on and sent the last one out today. I’ve also done a couple livestreams over the weekend! I’ll link to those later…
I made breakfast curry yesterday with leftovers to spare. It consists of scrambled eggs, and a quick curry sauce that I made with coconut milk as the base. I simmered some red bell pepper, carrot and potato in it until the sauce was thick and the veggies were tender. I then took some onion and garlic and cooked them in oil, salt, pepper and curry powder (more curry!) and then I mixed it all together and served over some rice. It was very hearty, and lasted me all the way to dinner. I had less rice today to make room for some yogurt that I mixed with some chai spices, honey and nuts. I also made some caramel apple chai with coconut milk on the side. All this talk of breakfast and I haven’t even had dinner yet… I’ll try and write more tomorrow.
New kinda breakfast sandwich
You can have a meatless breakfast and still come through satisfied. I took some leftover produce and ingredients from my Thai dinner the other night and whipped together a breakfast sandwich. I mixed together a scrambled egg mix that consisted of 4 eggs, a pinch of salt, some grindings of pepper, some grindings of shichimi togarashi (Japanese pepper spice), red pepper flakes, fresh cilantro, fresh grated ginger and some green onion. Before adding it to the pan I sauteed a purple shallot with some chopped ginger and deli red peppers (for added color) in salt, pepper, more shichimi and some lime juice. Then I stuck it between two slices of bread with some swiss cheese and sweet red pepper sauce (which also has a butt load of ginger) and I fried it like a typical grilled cheese. I was beyond impressed with the results, it was packed with the right amount of flavor, and meshed well with the cheese and the bread. How can you say no to that ooey gooey mess? I even made up enough for a breakfast wrap tomorrow.
Sunday Night Open Thread
The worst thing I could think of happened… there was no bacon to fry this weekend. But I still had some leftover ham. I made up one scrambled egg with paprika, cayenne pepper, salt, pepper, onion, garlic powder and some parsley, with some ham and swiss on top with a little bit of deli sliced red bell pepper, and secured between two crusty slices of French Bread. Wasn’t what I had in mind for breakfast this morning, but it was actually quite good.
I was going to write something yesterday, but ended up taking a 12 hour nap by accident. I feel well rested, but a bit sore… rough work week and all that.
Also managed to do a little livestream this evening; You can watch it here, as this one is a Twitch exclusive. If I have time to do a stream tomorrow I will, probably something else tho. Gained a couple new followers tonight too and peaked at 4! It was a good night I’d say.
A Meal Well Seasoned
I had some Shrimp lying around in the freezer, and green curried rice sounded nice. So I made that for dinner tonight along with some veggies.
This is a Thai inspired hot and sour salad. I didn’t have all the vegetables I needed in order to make it, but it still tasted fine to me.
For a light dessert type thing I had a green chai with coconut milk and a little honey. This particular chai blend has almonds in it, complimenting the green tea and the coconut milk.
The best part is that I have plenty of leftovers for after work. I’ve been doing milkshakes in the afternoon the last couple of days and it’ll be nice to have some noodles to greet me after work.
Some Dank Souls
Played a bit of Sekiro for awhile, until I got annoyed with the giant snake (didn’t take too long), so I opted to frustrate myself in Remastered Dark Souls, and I managed to progress past the first boss quite easily surprisingly… I just needed to leap on it then keep chopping away at its ass until I stole his keys and went outside to play with a giant crow.
I’ve arrived Firelink Shrine, and I keep getting my ass handed to me by two asshat skeletons. I’ll come back to them another time, at least I made it past the new boss and into some new territory. I would have worked on some video stuff but didn’t feel too hot after work today (or even during for that matter). I had to really push myself to make my yogurt cup for tomorrow. Unfortunately I couldn’t take a picture, but it’s a nice matcha blueberry parfait with almonds, white chocolate and some berry granola. I’m really looking forward to having it tomorrow, mixing the matcha powder with the yogurt gives it a nice earthy flavor. My strawberry and peanut yogurt parfait was still nice though, kinda reminded me of a PB&J sandwich without the bread thanks to the honey roasted peanuts. They softened in the yogurt and had a nice peanut buttery texture when mixed up with the yogurt.
