I wanted to do something healthy this weekend, but didn’t feel like doing any oatmeal. Instead I purchased a bunch of fruits, red and white quinoa, some pralines and caramel cashews and added milk, maple syrup and vanilla. I got the idea from this Taste Of Home Recipe, and I have to say I wasn’t expecting to enjoy it as much as I did; it was kind of like a sweet cereal. I’ve only ever had quinoa in savory salads and entrees, so having some sweetness with these seeds has been quite the pleasant experience! I might have to look into making more quinoa breakfast dishes, both savory and sweet.

Brunch In A Bun
I had a short work day this morning, got home and created this beautiful monstrosity; a roast beef breakfast sandwich with a sunny side up egg, bacon, smoked bleu cheese and caramelized onions in between some onion chewbacca bread. I’m even thinking of making another one tomorrow. I was happy with the results, given I didn’t even follow a recipe. It was just something that sounded good to sit down and enjoy before powering off onto other things on my to-do list.
Haven’t had a chance to post a good food post in awhile, usually due to my work schedule or just really shitty lighting when I go to actually make my breakfast. At least the planets aligned today so that I could take a snap of some premium slop.
Let’s Try This Again… Hello World!
Today was a grab whatever the hell is around the house and make breakfast with it kind of weekend. I made strawberry banana oatmeal with dried cranberries, and tangerine chipotle cashews… it sounds weird but it was a nice sweet/zesty flavor combo, especially with the brown sugar and maple syrup.
Mainly focused on household stuff today; like clean bedding, sewing a garment that was losing a pocket, spending moneys on evil birthday things for two months worth of birthday friends (you know who you are 😛 ), etc.
Breakfast Quinoa
Ever have one of those mornings where you just throw everything and the kitchen sink into a pan and make a breakfast? (or any meal time). I came home from work yesterday morning and made some quinoa with some chicken broth, a scrambled egg, Italian spices and seasonings, a tomato, a clove of garlic and an onion. I also grated some Parmesan and sprinkled on some goat cheese I originally intended for something else. It made about two helpings, and I had no shame in eating all of it! I’ve been under-eating for the past week and things finally caught up with me.
Philly Steak Without The Sandvich
I chipped in and made dinner this fine ass eve. I made philly cheese steak stuffed peppers with some bread on the side. It was pretty quick to make and very filling. I needed something easy to make, and this can be prepared in a little under an hour. I might make some cheesy risotto to make with it next time, or Quinoa or some form of rice.
More Food Porn
I took the surprise shaved beef that jumped into the fridge yesterday, made homemade Korean BBQ sauce (from this recipe), and simmered it with a bell pepper and some onion. I served it over brown jasmine rice, though this could easily go over buckwheat noodles or rice noodles (white or brown). We had an even hotter summer day today, and some form of BBQ sounded like a good idea. I don’t know what it is about higher temperatures that makes me crave steak so much. :v
Exposing My Meat To The World
We finally had a nice hot summer day! That gave me a perfect excuse to buy some steaks this evening, unfortunately it was too windy to do any grilling, so I opted to make some Portuguese style steak and potatoes.
These steaks have a homemade rub of garlic, balsamic vinegar in place of red (ran out of red wine vinegar…), and some salt and pepper, and they were fried in a pan of olive oil infused with a couple garlic cloves and a bay leaf. I fried some prosciutto to top each steak, and also a homemade wine/lime juice reduction sauce. It was all kinds of flavorful, something about the saltiness of the prosciutto balancing with the garlic-y melt in your mouth steak was just out of this world.
There wasn’t much to making the potatoes, just some butter, olive oil, salt and pepper. with a topping of fresh parsley. They actually remind me of fried potatoes that I used to eat at one of the local pizza places as a snack. I ran out of balsamic vinaigrette from last week and ended up making more. I try not to make the same dressing twice, but it was about 27C today, and light dressings on a crisp salad contrast nicely with a meat and potatoes meal. I’m sensing there won’t be much in the way of leftovers… but I do have some shaved steak in the fridge that someone else put in there. I already have ideas for it. possibly involving sauces and buns.
Dessert For Breakfast
I revamped my mint chocolate oatmeal bowl recipe this morning to include straight up chocolate chips, walnuts and brown sugar. It tasted like I was eating a bowl of liquid oatmeal cookie, it was bliss. If you need guidance in making your own:
- One scoop of oatmeal
- 1 1/2 cups of milk or milk substitute
- 1 tbsp brown sugar
- A few drops of vanilla and mint extract
- Walnuts: chopped or ground
- 1/4 cup Semisweet Chocolate Chips or to taste
Mix both extracts into the milk, pour milk over oatmeal in saucepan. Set heat to medium and heat through. Add sugar and walnuts, lower heat to medium low. Once the oatmeal has thickened stir in the chocolate chips. I decided to save them for last just so I could get a good mix of milk chocolate oatmeal, and have some semi melted chocolate chip pieces to savor in an otherwise already decadent bowl of gruel. This will definitely give you the energy to finish building up an email server, or anything else you fucking need to do.
Watermelon Oatmeal is a thing now… I’ve decided
Out of morbid curiosity I wanted to see if I could make a particular oatmeal with an infusion of juice and tea. Waters and milks are frequently used in making oatmeal, so why not juice, tea or both? After all tea is basically water with tasty plants. So this little experiment consists of green tea with ginseng, watermelon juice, honey, and walnuts. I might have to look into making an overnight oats version to enjoy the taste of cold watermelon, although it did taste good warm as well.
Maple Chai Yogurt Concoction
I’ve been having a hankering for chai pudding lately. I’ve searched the internet but haven’t found many results. Instead of making a dessert though I opted to make a yogurt cup with chai spices instead. I took oatmeal, vanilla greek yogurt, milk, chia seeds, fresh ginger, cloves, cinnamon, nutmeg, brown sugar, and maple syrup to make something like a maple chai. For the crunch topper I have chocolate granola with dried red berries. I’ve already had a little taste, and I’m already looking forward to lunch breakfast tomorrow!
