Holy Shit I Made Dinner

I pretty much lived in the kitchen today after coming home from work… There were plenty of dishes to do, leftovers to be eaten, and dinner to be made. I made a balsamic vinaigrette to top over some greens, tomatoes, feta and walnuts. The feta doesn’t stop at the salad either…

I made this recipe for feta cheese stuffed chicken breasts and they turned out excellent. I used smoked sundried tomatoes for another element of flavor, if you’ve never had smoked sundried tomatoes it’s basically tomato bacon. I oven roasted some red potatoes with garlic and Italian herbs. I think I’ll have to remember the chicken recipe, it’s really good!

Yay Bacon!

I slept in a bit too long this morning, and I was at that halfway point between breakfast and lunch. I was in a bit of a Chinese themed mood and opted to make some bacon and egg fried rice. Unfortunately I didn’t have any peas or spring onion, but I did chop and fry some yellow onion in the bacon along with the egg. I used brown Jasmine rice, but you can use any kind that you want. I have quite a bit leftover for tomorrow and a couple work trips methinks.

Weekend Morning Feast

The weather has been stormy outside (even got to see some lightning early this morning!), and what better way than to start my 3 day weekend with some homemade waffles with maple syrup, a cheese omelette, some bacon and a bowl each of watermelon and strawberry greek yogurt topped with strawberry dark chocolate granola?! I haven’t had anything of the egg/bacon variety in awhile, and my breakfasts have mostly been meal bars and one yogurt parfait here or there. The tea of choice this morning was some cocoa puerh with a splash of milk. It tastes like hot chocolate and it gives you a swift kick in the ass to start your day out right. If you ever want to try it out for yourself this is the stuff I’m talking about. I have a couple of their other teas such as Maple Puerh Chai and Watermelon Mint Aqua.

No, this is not a paid product endorsement… I just really like tea.

Obligatory Food Post

It’s been awhile since I’ve been able to make a food post… I must change that.

My brother was kind and decided to buy me an entire watermelon yesterday, and I wanted to have it with a fruit themed breakfast. Over my holiday I started working on a recipe for creamsicle oatmeal, and pretty much have the ingredients down. I use milk mixed with vanilla extract, orange juice, a nut of some sort (walnuts and/or pecans do nicely), and for added sweetness I’ve been using homemade golden syrup, but honey or regular sugar would also work. I’ve made creamsicle oatmeal three times now, and I’ve really been enjoying the blend of cream with actual orange juice. Some people might think it strange to use juice with oatmeal, but this isn’t my first time.

This is a tropical blueberry oatmeal bowl I made awhile back, and instead of using water or milk as the base I used blueberry lemonade and added my blend of fruits and nuts. I didn’t need to add any sugar, it was already provided in the lemonade.

It’s been awhile since I’ve had a handcrafted lunch smoothie, and so I decided to whip up a peanut butter and apple smoothie using greek yogurt, milk, peanut butter, cinnamon, frozen apple cubes, and a small bit of golden syrup. It was good, but I’m thinking of using less milk next time… too runny for my liking.

Murican English Breakfast

I felt like trying out a semi-english breakfast. Here we have bacon, sausage, toast, a fried egg hiding under some toast, and tomatoes and mushrooms that were fried in the leftover bacon and sausage fat, and of course we have some British style beans that I picked up the other day. I wanted to try beans on toast and it actually isn’t that bad. I used to think they used baked beans, but they just use a tomato sauce instead, and they taste quite good on toast. I’ve made up enough to have for work tomorrow too, so that kills two birds with one stone on my to-do list.

Apocalyptic Food Blogging!

 

It’s been awhile since I’ve done a food post. With everything being insane lately I haven’t had much time to really make anything proper… I’ve been having some special instant ramens, and of course still doing the overnight oats for breakfast, but for afterwork lunches I’ve pretty much been too tired to make anything from scratch. I was craving something like an egg tomato flower soup, so this got to be both my breakfast and dinner. Composed of egg, tofu, ham, and a chicken ramen broth with tomatoes, red bell pepper, mushrooms, and a mix of Miso and Korean Chile Paste with some Japanese Udon. Sadly I had nothing resembling an onion to use or I would have added one, but it was still good. Not bad for not following a recipe anyway.

One of the interesting things I’ve learned from the current pandemic is that a lot of people are having to learn how to cook now due to restaurants being closed, or not being able to get takeout for any reason. If you do a basic online search you’ll find people posting about having to learn how to cook, or places to find online classes. I’m just thankful that I can still buy food and randomly put things together to resemble something looking like a meal. I still have plenty left over to last me a few days.

Miso Hungry

wtf even is this shit

I was craving a bowl of Miso Soup today. Something nice to slurp on after another long day of throwing cardboard boxes and lifting televisions and other shit. I made a basic Miso Soup with the addition of some baby bella mushrooms and a shredded carrot with some ginger. I poured it over some soba noodles, it was quite earthy. I also prepared some more overnight oats for tomorrow, doing matcha strawberry yogurt, blueberries and coconut milk.

Oats n Grains

Since I indulged myself on caramel with my breakfast I went with ALL OF THE FRUIT!!! plus some maple syrup and brown sugar. This and some toast held me over til lunch, which I actually made today!

I had some kielbasa and peppers with onion and garlic mixed with quinoa. It was so good that I had to have seconds. Should have enough for some after work munch tomorrow too. My stomach is feeling much better, just in time for me to go back to work I guess. :assy:

I have made another attempt to have portable oatmeal for my work adventure tomorrow… This week I’ve decided will mostly be overnight oats in the morning. Aside from Caramel Banana Mach II I’ve also made a cherry vanilla matcha and mexicocoa cherry oatmeals to enjoy!

Repairing my stomach with warm sweetness

I wasn’t feeling too well last night. Around lunch time yesterday I couldn’t find my overnight oatmeal breakfast. At first I thought I left it in my backpack but it wasn’t there, and I doubled checked the fridge at work but couldn’t find it either. I automatically assumed that I left it at home by mistake and decided to buy some sushi for myself and figured I would have my breakfast lunch for actual lunch when I get home… but at the end of the work day when I got my groceries out of the fridge I noticed it was in there at the forefront ready to be consumed :morty: . I know I didn’t miss it at lunch, there was hardly anything in the fridge taking up residence. My first thought was that maybe I left it on the ground in the locker room by mistake (not that it would matter since it was insulated) or one of the asshats at work tried to pull some form of prank (as is tradition among asshats at work they refuse to fire due to poor hiring rates). I reluctantly disposed of it… always hate seeing food go to waste but I didn’t want to take any chances.

My meal choices weren’t really that… great yesterday. The sushi tasted good, but it was too spicy for my work morning, lunch was homemade nachos from the night before, and for dinner we were too tired to make anything and ordered Burger King. That was enough for my stomach to flip me off this morning; sleeping was terrible… I got about 6 hours on and off due to waking up with stomach pain constantly. I finally got over it after making myself some caramel banana oatmeal to make myself feel better after losing out on trying the overnight version. That cured my belly and caused me to go into a two hour coma to make up for lost sleep. I started my day later than I wanted to, but hey at least I felt better. Not so much now though. :zorak: I might have to do more oatmeal therapy in the morning.

Portable Oatmeal

I didn’t have enough yogurt to make a parfait and felt now would be a good time to start experimenting with that whole “overnight oats” concept I’ve been hearing about. I currently have this particular experiment sleeping in the fridge til morning. I didn’t include the protein powder, although I did add some peanut butter on top. I also used frozen blueberries, grated frozen ginger, three berry granola and shredded coconut. It smells really good, and I added enough matcha to satisfy both the palate and the eye. I’m thinking of getting some bananas tomorrow and making this caramel banana one for Saturday.

Anyone else try making overnight oats?
