Baked Baking!

An egg bake consisting of egg, arborio rice, broccoli, toasted onion, cheddar, parmesan, and a little bit of garlic with some parsley and basil.
Cheddar Broccoli Egg Bake

It’s been awhile since I’ve made a food related post, hasn’t it? Every weekend I do myself a solid and make myself a fine breakfast/brunch since I don’t really do breakfast during the work week. We’re in autumn now, which means cooler weather and an opportunity to make use of the oven! The nice thing about egg bakes is being able to mix your fave ingredients/ pouring them into a bowl and letting the oven do it’s job! I was originally going to make an Italian Broccoli Oven Fritatta, but forgot a couple ingredients. Fortunately I have plenty of other ingredients to not only improvise, but make my own tasty abomination! You can adjust the ingredients to your liking, but this is what went into mine:

  • 5 Eggs
  • Cooking Oil
  • 1 Packet of frozen broccoli (chopped)
  • 1 Cup of cooked rice
  • 1/2 Cup of toasted onion
  • 2 Small garlic cloves, or 1 big ass garlic clove finely chopped
  • 1 Cup of grated cheddar cheese
  • 2 Tbsp of grated parmesan cheese
  • 1 Tbsp of parsley
  • 1 Tsp of basil
  • 1/2 cup of milk
  • Salt and Pepper to taste

Beat eggs until well combined. Mix in herbs, cheeses and milk. Set aside.

In a medium sized frying pan place enough oil in the pan to lightly coat the entire surface and set over medium heat. Cook the onion until translucent, unless you want them to be caramelized – remember to stir frequently! Add broccoli. Stir frequently and cook until tender, then add garlic and fry for about 30 to 45 seconds. Mix into egg mixture until well combined. Grease a baking dish with butter, or cooking spray and then pour the egg mixture into the dish. Bake at 350F (176C) for 25 to 30 minutes. Remove from oven and let stand for five minutes. Serve with a salad or some toast.

Sunday Bakes While Getting Baked

A couple weekends ago I spoiled myself with some homemade Huevos Rancheros, and today I was inspired to make another private Mexi-Brunch! It’s actually based off of this recipe I found. I used black beans instead, and I also topped it with bell peppers. I also fried up some chorizo for some street tacos on the side (or later for lunch). Everything was perfect! I did make some of my own changes though. I used Black Beans instead of Pinto, and I added on a couple different bell peppers. I also made my own ranchero sauce, the one on the website wasn’t smoky enough for my liking. I like a nice smoky tasting Huevos Rancheros. Something about a smoky salsa on a melty egg is sugar tits awesome.

Just looking at the picture is making me want to get a bedtime snack.

In Other News I Did Things

I did quite a bit today… Made a breakfast shake, baked muffins, animated more of the current nightmare fuel project, and even found a proper poll plugin that passes flying colors. All in all a productive way to end my weekend.

I’ll put the poll up as its own page, or possibly integrate it into the main page somehow if it doesn’t look too intrusive, and also make a post about it after Christmas. Just like last time no account is necessary, and the limit will still remain as one IP vote per household. I’m really interested in how this turns out! No matter how big or small the participation is. :v

Some Food To Break The Silence

It’s my Mother’s birthday today, and since she’s working late I not only made a hot pot of homemade chicken and brown rice soup with black beans, corn, tomatoes and chiles. Something that will be easy to heat back up, and gets more and more flavorful as it sits. I mixed in some smoky chipotle salsa to give it a nice deep flavor.

It might seem weird to server garlic bread on the side, but it actually tastes pretty good when dipped. I bought a couple artisan loaves of garlic bread (with full garlic cloves baked in) and made my own garlic butter to spread on it. I also made a cake for the occasion:

I don’t do cakes too often, so I’m surprised it turned out as well as it did. This is a chocolate cake with a peanut butter cream cheese frosting. I can’t wait to try it tomorrow! I wanted to find some small Reeses to chop up and spread all over the cake but I could only find the big ones, and the consistency just wouldn’t be the same.

Again, work has been keeping me pretty busy this week. I’m expecting the last of my packages tomorrow, so hopefully this will be the weekend where I can finally ship them off to their respected locations. There will also be a video dropping tomorrow, and if I’m lucky some form of livestream this weekend. I also bought the DMC5 Deluxe Bundle during the Steam Winter Sale, and want to have a go at that this weekend. Not to stream, but just to check out. Probably gonna get my ass kicked, but as long as I get to slice and shoot things I’ll be ok. I’m thinking of buying a few other games too, after all I do have until January 2nd to make my decisions.

Food and Adventures

I haven’t felt too well these last few days, and on top of that my schedule has been keeping me jumping. Yesterday I chilled with Yutram in the Gmod Cinema after work, and got motion sick afterwards for some reason… that resulted in an accidental 12 hour nap. I felt better though. Well enough to make breakfast:

I made an egg and bacon muffin with some colby pepperjack. It was a nice small and quick breakfast item to get the day rolling. I baked some cran-apple muffins:

I bought some apples for dirt cheap, and figured muffins sounded like a nice thing to both keep the house warm and make things smell good. Plus I prefer making my own munchies anyway.

He’s Been Shrek’t

Got a little further in Sekiro. Defeated Lady Butterfly, made a bracelet out of the anal beads of my enemies, killed Shrek, killed almost anyone I crossed paths with and had a big white snake show up in my face.

At this point I decided yeah… I’m doing pretty well. I looked into mods for a couple other games, and I found some additional fun ones for MGSV and the Dark Souls games. Those will have to wait for another time. For now I’ll try not to have nightmares about White Mamba… the Siberian ass slugs are enough of a problem.
