The original plan was to make a cashew nut curry for my weekend breakfast, but our neighbors bamboozled us with some english muffins! So I decided to poach a couple of eggs with a homemade red curry sauce, added feta to garnish it. Then today I took the leftover sauce and had it over a goat cheese stuffed omelette, then topped it with a mix of olives and roasted red bell pepper. I would have taken a pic, but I couldn’t stop myself from eating it! Maybe next time!

Weekend Food Diary: Vegetarian-ish Edition
I’ve been having a nice weekend. I started it off after work on Saturday by making myself a creamy primavera lunch. I made a white sauce and added some Italian herbs and mascarpone cheese with some salt and pepper. Then I used all kinds of vegetables that most people I know would find vile and ungodly. I used asparagus, broccoli, zucchini, green beans, green onion and snow peas with a spinach salad on the side with homemade raspberry vinaigrette. I’m going to have to make more of the vinegar sometime in the not too distant future as I’m nearing the last of it; though it has lasted me almost a couple years!
I took all the leftover vegetables I had, added some carrot and red bell pepper and made a brown jasmine fried rice with egg for breakfast, and again for lunch with added cashews on top. It’s really good, but next time I’ll just keep it in mind for use as a light lunch item best paired with salad or a light soup.
Then today rolls around and I STILL have an assload of vegetables to get rid of, so I make a green breakfast curry over white jasmine rice. I think I have enough to last me the week or so. Lotsa leftover pasta too, should be good for an after work lunch tomorrow. :v:
Yogurt on a sandvich?
There was a sale on some cheesecake factory bread the other day. They had these nice baby baguettes, and I’ve been in a sandwich mood these last couple days for my after work lunch.
I made a tuna curry spread (though you can substitute cooked chicken and porn in place of the tuna) with a mix of plain greek yogurt, curry powder, cumin, green onion, garlic, shredded carrot and coconut, grated ginger, chopped serrano pepper, and some salt and pepper. Topped with some baby spinach and swiss cheese. This one probably won’t be everyone’s cup of tea but I liked the flavors, and its a versatile spread! You can have it on crackers, in wraps, or on a salad itself with some fruits. I already have it prepped as a salad for tomorrow morning to break up my parfait trend a little. I’ve made sure to include some orange wedges and pineapple to add some flavor and juiciness.

I had a bunch of extra vegetables around, and was still in a curry kind of mood today. When lunch came around I sacrificed one of my chicken breasts for a green chicken curry with rice noodles. I made it mild, stomach hasn’t been nice to me today. Fortunately I also made the breakfast curry mild too. 😛 I’ve also been living on chai today. Started the morning off with a Canadian Maple Chai, and ended the day with some Rooibos Chai. I already have breakfast curry packed up for tomorrow morning along with some grapes, crackers and peanut butter dip. That should keep me plenty fueled tomorrow morning, even the tea has caffeine. I’m Ret 2 Go.
I’m thinking of taking the other chicken breasts and using them in a baked chicken recipe, involving some gouda cheese and prosciutto.
From Spicy To Sweet
Been awhile since I’ve made a breakfast curry, and we were low on vegetables, so it gave me a good excuse to buy some and make a nice breakfast curry. It has bell pepper, potato, carrot, fresh green beans, onion and grated ginger. All cooked in a homemade red curry sauce poured over Jasmine Rice. I have enough to last me for the week methinks, and tomorrow if I’m up for it I want to try and make a Chinese breakfast pancake. I found a recipe recently and I want to try and make my own.
I also felt the need for a sweet snack of apples and peanut butter dip. I made it with some peanut butter, greek yogurt, vanilla, honey, cinnamon, nutmeg, fresh ginger, cayenne pepper and some coconut milk to make it a little easier to stir. Tastes nice on apples and even vegetables, like carrots or green beans for example. I made a big bowl, should also last me awhile, a good protein packed dip to accompany some chopped fruits and veggies that tastes like a dessert. I can’t argue with that.
Curry! It’s for breakfast!
Sorry for not writing, been stuck between busy and shiny objects. I brought home four computers the other day to be worked on and sent the last one out today. I’ve also done a couple livestreams over the weekend! I’ll link to those later…
I made breakfast curry yesterday with leftovers to spare. It consists of scrambled eggs, and a quick curry sauce that I made with coconut milk as the base. I simmered some red bell pepper, carrot and potato in it until the sauce was thick and the veggies were tender. I then took some onion and garlic and cooked them in oil, salt, pepper and curry powder (more curry!) and then I mixed it all together and served over some rice. It was very hearty, and lasted me all the way to dinner. I had less rice today to make room for some yogurt that I mixed with some chai spices, honey and nuts. I also made some caramel apple chai with coconut milk on the side. All this talk of breakfast and I haven’t even had dinner yet… I’ll try and write more tomorrow.
A Meal Well Seasoned
I had some Shrimp lying around in the freezer, and green curried rice sounded nice. So I made that for dinner tonight along with some veggies.
This is a Thai inspired hot and sour salad. I didn’t have all the vegetables I needed in order to make it, but it still tasted fine to me.
For a light dessert type thing I had a green chai with coconut milk and a little honey. This particular chai blend has almonds in it, complimenting the green tea and the coconut milk.
The best part is that I have plenty of leftovers for after work. I’ve been doing milkshakes in the afternoon the last couple of days and it’ll be nice to have some noodles to greet me after work.
In Today’s Episode Of Breakfast: Bacon Will Be Played By Smoked Salmon
For the first time I finally made a tamago I could be proud of. I made a chirashi sushi bowl with sushi rice, cucumber, smoked salmon and a tamago omelette made in an authentic tamago pan to get the dimensions just right. I also had some pickled ginger that I haven’t torn into yet, and finally got to break it in. Then there is also a garden salad with sesame dressing, and some greek strawberry honey yogurt with mandarin oranges. For me in the morning this is quite a feast, but felt really good for most of the day.
Then later on in the day I took the leftover tofu from yesterday, as well as the leftover scallions, sliced a bell pepper and made a noodle curry. It was really spicy, but not too sweet. I also had a nice green chai a bit ago, something sweet sounded nice after browsing Amazon for teas. My flowering teapot is already giving up the ghost after only being unboxed for a few months… so I purchased a more durable one with a better handle. While I was there I also decided to purchase a few teas. There aren’t any good blueberry teas locally, and I also wanted to see if I could hunt down a maple syrup tea, and Holy Twatwaffles Batman! I found a really good candidate. That just sounded too good to pass up, and it’s a Pu Erh! Those are great to have in the morning for a high energy tea. I also found the flavors Caramel Nougat and Apricot Amaretto to be quite intriguing… then of course there’s the original tea that I thought of. I haven’t tried this one before, but it sounded like a good blend to try.
I have a short day of work tomorrow; I’m thinking when I get home of making a scramble of eggs with some tomatoes and mushrooms… maybe some homemade Potatoes O’Overlord with a cream sauce… something hearty. Then perhaps a nap and some SFM work, did nothing but cook and play games today. Do something hearty and somewhat serious tomorrow.
Evening Open Thread
Tonight I decided to chip in and make dinner for everyone, this was a bit of a challenge since I haven’t felt well these last couple of days. But I had taken painkillers and candy, and was able to put together a chicken curry dish:
Originally it wasn’t supposed to have a bunch of vegetables in it, they were for a Thai salad to accompany the chicken curry. Sadly when I went shopping today they were out of some additional ingredients, which left me with combining the vegetables with the curry. I regret nothing. 😛 I used Mongolian fire oil to stir fry everything, and a yogurt curry masala. It was spicy, but just the right kind of spice. It paired well with peanut sauced noodles, everyone loved it. The best part is that there’s still leftovers for tomorrow’s lunch! :happy:
Open Thread
Yesterday I was too busy/tired to write anything. My main job wiped my ass out, and after work I went over to the doc’s office to take care of their SSL certs. I’ll be heading over there again next week to discuss other things involving the site, and also I’ll be doing some photography for them. They wanted to take pics of the offices using a smartphone, I volunteered my camera for the job. It has more megapixels. 😛
Then when I got home I played around a bit in Skyrim and made dinner. We had a nice chicken potato curry, and there’s lots of leftovers which will ensure that I’ll have plenty of food for work. 😛
So today I decided to relax instead with the usual activities. I’ve been following the Path Of The Druid quest and gained the ability to become an ice wolf.
There are other abilities I can obtain, like fire and earth. Right now I just think it’s funny being able to shapeshift into an ice breathing wolf at will. 😛
Oh, and I had a scary occurrence.
